生滾綿香魚粥 妹記生滾粥品 旺角花園街市政大廈 4樓熟食中心 11-12鋪

星期日上午吃粥，清清一星期立雜腸胃最啱，不過旺角妹記熬粥卻不是飯煲上簡單一啪的按鈕。曾在上一輩記憶中共識的麥花臣球場前的大牌檔擺檔， 91年搬到花園街街市的妹記，由第 2代年近 60的蔡生掌舵，出名魚粥，凌晨 12點，正當人人準備入睡之時，蔡生及一眾夥計，就會開始熬粥，用上越南絲苗米，放入預先以大魚、腐竹、果皮、薑絲等材料慢火熬煮 6小時的魚湯做湯底，熬製 4至 5小時，校啱 6點鐘，晨光第一粥醒畀客人。根據粥身杰稠程度，一早做好的粥，還要由蔡生親自放入以青紅鐵製的鐵煲中再煮，通常放置久了，就會逐少慢慢摻水再滾，其間再放入預先用薑爆香了的鯇魚腩肉，而魚腩只會煮熟 7成，主力用粥的熱力將之滾熟，亦確保魚不會煮得太熟，影響口感。值得一提，由於位於街市頂層，鯇魚肉魚腩從樓下魚檔直接取用，新鮮程度可謂滿分，唔食走寶。

預先熬好的粥，上枱前還要經過猛火重新滾起及翻兜，食落啖啖都是生滾熱力和香氣。
