懷舊煮意 食譜 油泡肚仁

爽而不脆保存真味　油泡肚仁有竅妙

取豬肚厚的「肚尖」部位，泡炒作「油泡肚仁」是歷史悠久的「撚手名菜」，清代美食名家袁子才所著《隨園食單》也有記載泡炒肚丁之法，泡炒豬肚尖爽脆可口，可惜每有鮮味淡薄之弊，所以有此缺陷乃因多用梳打食粉或鹼水醃過，導致真味流失。

 

順德廚師針對此弊戒除「落降」陋習，讓豬肚尖以真面目示人，口感爽而不脆，但原味不失有鮮美之妙。
區區聞說有醃肚仁必爽的妙法，是把活水蟹搗碎取汁作醃料，既能達到口感爽脆之目的，更有保存鮮味之妙效。
所聞如此，不過區區並未親自驗證過，有興趣者不妨一試，八十年代出版《順德菜精選》有「油泡肚仁」之法。
