※ [本文轉錄自 Food 看板 #1IJDdqxl ] 作者: blueherobest (苦蓮) 看板: Food 標題: [食記] 重慶 洪鼎 美人美火鍋 時間: Thu Oct 3 10:44:01 2013 圖文:http://bluehero.pixnet.net/blog/post/32693011 時間:2013/8 晚上來到了重慶的洪崖洞，是傳統的重慶建築，只是現在已經改建成旅遊景點，有不少餐 廳進駐。本來是要吃小天鵝火鍋，可沒有位子，只好到對面也同是小天鵝火鍋開的洪鼎， 就在小天鵝對面而已。 洪鼎是小天鵝新的品牌，不同於小天鵝的傳統大鍋麻辣鍋，洪鼎主打的是個人式的小麻辣 鍋，其實就像台灣的涮涮鍋一樣。 雖說如此，但洪鼎的座位也都是大圓桌，適合多人一起用餐的座位。這種經營取向真是奇 怪，做小鍋的不就是要給散客、少人的族群吃嗎？怎麼還是用大合菜的理念去規劃座位呢 ？ 每個人桌上都有個小鐵爐架子，這是用來架小火鍋的底座，底座放在酒精燈作為火源，類 似台灣三媽臭臭鍋的作法。 重慶麻辣鍋￥18 鍋底是18元，不算便宜。這家洪鼎主打的是精緻高價位的路線，比一般重慶的火鍋店來得 貴上許多。剛送上的鍋底還是凝固的底料，放在紅湯中加熱後融化成麻辣湯。 自助醬料也是要收費的，一人收費10元人民幣，不限次數取用。 我調了重慶的香油碟，蒜泥、蔥花、香油和香醋。 鍋底紅湯徹底融化開始沸騰了，洪鼎的重慶風味麻辣湯雖然看起來紅通通的，但其實並不 太辣。主要是豆瓣醬的鹹味較重，伴著一點辣味以及麻感。這個鹹度煮出來的食材基本上 就很有味道了，僅沾香油就夠，而且香油碟裡加上醋，增加酸溜的滋味會讓食物更加爽口 。 另外點了罐王老吉來喝，記得現在王老吉好像改名叫加多寶了？其實我不是很喜歡喝王老 吉，因為他是甜的茶，我不喜歡喝有甜味的茶。不過不得不說，吃麻辣鍋喝王老吉還蠻解 辣的。 一個人吃不了太多，只點了這些料。一個人吃麻辣鍋還是挺貴的，最後的消費金額大約台 幣七百多，重慶的物價很高阿，一點都不輸台北。 精選法式松阪豬￥38 說是松阪豬，可看起來也不像豬頸肉，倒像是油花比較豐富五花肉片。肉質不錯，口感相 當軟嫩，可也因為很軟嫩所以才不像松阪豬，像是五花肉呀。 經典的吃法，肉片沾香油碟吃，香油性冷，火鍋如此上火的食物，沾了香油只後可以降火 氣。而且沾了香油並不會油膩，反而可以把火鍋裡裹在食材上的辣油給沖掉一些，讓食物 比較不那麼油與辣。 鴨血￥8 方塊狀的鴨血，放進鍋中得煮久一點才入味好吃。 重慶現炸酥肉￥18 酥肉這種食物在大陸許多地方都有，其實就像我們的排骨酥，只是不帶骨頭，通常是用里 肌肉的部位去酥炸，或許也能叫炸里肌肉。重慶的酥肉有自己的作法，通常是長條細狀的 豬肉條裹粉漿油炸，炸到麵衣酥脆。而豬肉條極細，其實常常吃起來感覺不太到豬肉的存 在，反而是麵衣的酥脆感較重。 這道酥肉是可以直接吃，但我想也可以泡在湯裡一會兒軟化再吃，就像老油條的吃法一般 。說到老油條，似乎重慶火鍋不流行放老油條吃啊？沒見過老油條。 鮮鴨腸￥22 鴨腸、鵝腸這兩樣禽類的腸子似乎是在四川吃火鍋必點的食材，算是重慶火鍋的一種特色 吧。台灣的麻辣鍋就比較少吃鴨腸，台灣的鴨腸似乎比較常在滷味攤上見到。鴨腸入鍋煮 後會變得有點螺旋狀，可怕的是螺旋狀的鴨腸常會包裹著花椒或辣椒粒出來，一個不小心 咬下就是滿口麻辣。煮過的鴨腸口感脆又有韌性，挺不錯的，難怪幾乎每桌都有。 洪鼎是來重慶第一家吃的火鍋，蠻意外的是比起成都的火鍋來說，重慶比較不那麼辣，口 味應該比較適合台灣人一點，但也是比較重口味，相當地鹹。 洪鼎 美人美火鍋 地址：重慶市渝中區嘉陵江濱江路88號洪崖洞風景區4樓 電話：023-63039901 -- 一個人的美食、旅行與生活...柔藍食單 http://bluehero.pixnet.net/blog -- ※ 發信站: 批踢踢實業坊(ptt.cc) ◆ From: 120.126.129.3 ※ blueherobest:轉錄至看板 China_travel 10/03 10:44 ※ 發信站: 批踢踢實業坊(ptt.cc) ※ 轉錄者: blueherobest (120.126.129.3), 時間: 10/03/2013 10:44:12

吳尊 傳劈 腿Ella　撇緋聞舊愛恐
