鼎泰豐店門口永遠是大排長龍，想要吃一籠剛出爐、熱燙燙的小籠湯包，沒有等上一個小時，是吃不到的。最近，美國有線電視新聞網CNN旗下的CNN Travel旅遊報導，替旅客選出全世界最讚的連鎖店（Golden chains: 20 greatest franchises for travelers）。其中，來自台灣、從台北永康街起家的「鼎泰豐」，居然打敗世界知名連鎖店，榮登第二名。這的確是一項成就！

CNN認為鼎泰豐之所以是世界排名第二連鎖店的原因是：

Why we love it: Transparent dumpling skin allows us to assess ingredients inside.

如果你也曾在鼎泰豐吃過它的招牌菜——小籠湯包的話，以上這句英文你一定也心有戚戚，它說：「我們為什麼愛它：小籠包透明的皮讓我們可以看到它的內餡。」

在西方人的眼裡，亞洲人吃的食物裡，凡是有包內餡的，都可以概稱為dumpling，所以水餃、粽子、包子都可以用dumpling一字帶上。此句中的“Transparent dumpling skin”是指「透明的小籠包外皮」。但是這一句CNN最愛鼎泰豐小籠包理由的句子裡，最重要的國際職埸與多益測驗核心單字卻是assess與ingredient。

assess是「評估」、「評量」之意，它的名詞是assessment。職場上，常需對許多事情進行「評估」，所以常用此字。ingredient是「原料、配料」、「成份」，也可以衍申出「因素」、「要素」之意。

例句：

Efficiency is an essential ingredient of time management.（效率是時間管理的基本要素。）

• transparent　[trænsˋpɛrənt]　a. 透明的；顯而易見的
• assess　[əˋsɛs]　v. 評價；評估
• ingredients　[ɪnˋgridɪənt]　n. 組成部分、原料；要素、因素

此外，CNN的評論家們說：

With more than 70 restaurants in 11 countries and customers complaining about hour-long waits at most of them, Din Tai Fung has taken something simple and turned it sublime.

此句是說：「隨著在11個國家有70家餐廳以及顧客抱怨總是大排長龍等候，鼎泰豐已經把一個再簡單不過的小籠包，轉變到絕美的境界。」
