市售餿水豬油　立委質疑衛福部早知道

立委林淑芬今拿出衛福部2011年委託民間單位做的油品反式脂肪含量的研究報告，指豬油照理不該有反式脂肪，抽樣業務用豬油的含量卻高達4.1％及3.3％，質疑衛福部早就知道市售豬油是餿水油。食品藥物管理署食品組長潘志寬回應，食用油脂只要經高溫精煉，不論動植物油都會產生反式脂肪，且部分市售豬油調合植物油，抽驗出反式脂肪並不意外，2011年的研究報告是調查豬油反式脂肪含量的背景值，做營養標示參考用，非隱匿不報。
 
潘志寬說，今年4月前，該署公告反式脂肪含量低於0.3％可免標示，但僅限氫化的反式脂肪酸，因動物油脂會有天然脂肪酸，專家認為營養標示應合併氫化和天然的反式脂肪含量，該署2011才會進行市售豬油的背景值抽驗調查，若調合豬油的植物油比例較高，反式脂肪酸含量會偏高。
 
食藥署研檢組長陳惠芳補充，動植物油脂經240～260℃的精煉過程，都會產生反式脂肪，根據美國、墨西哥等調查，市售油脂的反式脂肪含量平均約3％。（蔡明樺／台北報導）
